Thai Squash and Tofu Coconut Curry

A hearty and satisfying vegan red curry dish with seasonal kabocha and red kuri squash, green beans and tofu. For the sauce, we purée some of the roasted squash with coconut milk and spices. We finish it with thai basil, lime, and cilantro.
All soups and stews are sold by the 32oz quart and sold sometimes fresh, sometimes frozen (they are prepared on rotation). One quart serves 2 as a main dish or 3-4 as a side dish. To defrost, place entire quart in a pot of warm water until the sides loosen enough to empty contents into a sauce pan. Simmer on low, covered until heated through.
